The blend of Vermentino (56%) and Fernão Pires (44%), gave the wine its fitting namesake of the 'Iberion'. Both varieties were harvested separately, then tipped straight into open top tanks with their skins and all. Spontaneous yeast kicked things off, and after five days were pressed together and finished primary ferment in tank.
At the completion of ferment, the wine was transferred to old French barriques. Elevage occurred for two months to assist in building further texture to this zesty and mineral
driven dry white wine.
At just 9.9% alcohol this wine is a perfect aperitif, or can easily be enjoyed with or without food.
