The Wine:
Dr Edge Tasmania Pinot Noir  is a blend of Derwent Valley (70%) & Tamar Valley (30%)  fruit.  All manner of whole cluster inclusion, hand stomp, foot stomp and bum stomp maceration occurs across each parcel before blending to the Dr's house style. Natural yeast (Pied de Cuve method) ferments the grapes which are pressed to old oak casks  to lay low for 9 months before bottling without filtration or the use of fining agents.

"Well here’s the more ‘classic’ style of Pinot Noir, I guess, if you could call it that. It’s cherry and strawberry, quite spicy with a dash of cinnamon and pencil, a little stalky/bunchy, but rosy perfumed too. Medium-bodied, slightly meaty and savoury, but that cherry/raspberry flavour is bright and present, the tannin offers firm grip and grain, and the finish is stony and long, with something of a blood orange juiciness. Delightful Pinot Noir. Such energy and character."
